I did a couple things different this year.  We cooked the turkey the night before Thanksgiving.

I'll never do it again.

1st off...it doesn't take that damn long to cook a 21 pound turkey.  3 hours if you don't stuff it.  So, my idea about saving time in the morning didn't make sense.  And now, we're automatically having leftovers for Thanksgiving.

The other thing we did was watch how to carve a turkey properly.  Not to say my father did it incorrectly all those years...but I did feel like we got a LOT of meat off the carcass.

Next year, in my ever evolving quest to cook the perfect turkey, I will take it out of the turkey bag (we just oven bags to get it super juicy) and let it cook the skin a bit more.  Also, I kinda wanna make turkey soup by cooking the carcass.

Next year I will have to google more to find out how.

That being said, according to the USDA, turkey, stuffing, potatoes, yams, gravy, and pumpkin pie can all last three to four days in the fridge.  After that there is a potential for bacteria to grow and make you sick.

You should eat them tonight or freeze them until you're not absolutely sick of turkey. Most leftovers can last a few months in the freezer. So prepare for turkey sandwiches now to eat in January.

There's one Thanksgiving staple that WILL survive in the fridge a little longer though.

They do say that homemade cranberry sauce lasts a week to ten days and the canned stuff can last up to two weeks in the fridge.
